Apple Cinnamon French Toast
The day before serving, prepare apples and french toast; in a large skillet, melt butter over med. heat. Add apple slices and cook, stirring occasionally, until tender.Add brown sugar, corn syrup, and cinnamon to apples. Cook, stirring, until brown sugar dissolves. Pour apple mixture into 13 x 9 inch baking pan and spread to an even layer. Arrange bread slices in one layer on top of apple mixture.In a medium size bowl, with a fork, beat eggs, milk and vanilla until well mixed; pour over bread slices. Cover with plastic wrap and refrigerate overnight.Next day, heat oven to 375 degrees. Remove plastic wrap from pan and bake French toast 30 to 35 minutes or until firm. Cool in pan 5 minutes, invert serving tray over French toast and carefully turn both over to unmold so that apple layer is on top. Spoon over bread any apple slices or syrup left in pan and serve immediately. |

The Best Oatmeal Cookies
Beat eggs and add raisins. Cover with plastic wrap and set aside in refrigerator for one hour.Cream together vanilla, margarine, and sugars. Add egg and raisin mixture.Sift together the rest of the ingredients and add to above. Mix thoroughly and put on ungreased baking sheets. Bake 10-12 minutes in 350 degree oven. |

10-Cup Cookies
In large bowl, cream butter, peanut butter, sugar, brown sugar, eggs and vanilla, with electric mixer. In another bowl, combine flour, baking soda and baking powder. Add flour mixture to creamed mixture,mixing well.With wooden spoon, stir in coconut, chocolate chips, raisins or dates, walnuts and oatmeal.Drop by spoonfuls on lightly greased baking sheet. Bake at 350 degrees for 12 to 15 minutes or until lightly browned. Makes about 5 dozen 3-inch cookies. |

Cranberry Orange Scones
In a bowl, combine flour, 7 tsp. sugar, orange peel, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs; set aside.In a small bowl, combine cranberries, orange juice, cream and egg. Add to flour mixture and stir until a soft dough forms. On a floured surface, gently knead 6 to 8 times. Pat dough into an 8 in. circle. Cut into 10 wedges. Separate wedges and place on an ungreased baking sheet. Brush with milk, sprinkle with remaining sugar. Bake at 400 degrees for 12 to 15 minutes or until lightly browned.Combine Orange Butter ingredients; serve with warm scones. Yields 10 scones. |
